BMW: Excite all your senses with Chef Ronaldo Linares

It’s Saturday November 4th and I find myself driving the Ultimate Driving Machine. Sitting behind the wheel of the all new M-4 with its 400 plus horsepower was a moment I will never forget. Taking those corners at full throttle on the fast lap, left my blood pumping and got me ready for what’s to follow.

What was to follow exactly!

Here’s the backstory, a few weeks back I got contacted by BMW to be the Celebrity Chef for the Ultimate Culinary Experience and with no hesitation I said YES.

After driving, people indulged in a culinary experience from yours truly and our restaurant Martino’s Cuban Restaurant. Crowd was entertained by a curated 3 course tasting menu which included a cooking demo for each course. The event was not to be missed!

The event started with an amazing introduction by Kevin Williams, the VP of multi-cultural affairs for BMW. He is the person who hired me, by the way he’s a well dressed individual. After the introduction, I shared a few words about my path to the BMW stage and all the tasty ups and downs that life has dished out.

The first course was a Tahitian Cubano Ceviche that blended granny smith apples, bassa, red peppers, coconut milk, lime juice, and a select blend of spices. 

People loved this dish and it was a perfect opener to the event. Crowd loved the demo, with an audience member cracking open a coconut. And an end result was an appetizing vision – a colorful mix of different textures.

In between each demo, the audience had a great surprise, two professional dancers came out and gave them a show. A blend of salsa, merengue, and everyone’s favorite bachata.

Time for demo number 2: Sous vide pork tenderloin, mofongo (plantain mash), and a beautiful mojo sauce.  I did a quick demo of the pork tenderloin, the breakdown, and marinade.


As always I had a trick up my sleeve, calling on the audience to help me with the surprise. The surprise was the actual construction of the mofongo. What excited me is sharing the love of my culture to a room full of movers and shakers. A mofongo recipe that I don’t think many have seen live. Not only did I pull it off, but pulled it off with an audience member. Showing that all you need is the right sazón and ingredients.

The last dish was a deconstructed Apple Pie, a cored red delicious apple stuffed with fall whipped almond butter, topped with a cream cheese whipped topping, and fill dough crumble. The perfect ending to the evening.

The people would get the actual dish as I executed each demo. Let me tell you, I was able to “EXCITE ALL THE SENSES”.

As a chef all we want is the first and last bite to be perfect and when that nirvana is achieved, then you could go to sleep knowing that you’ve met you goal.
